Black-Eyed Pea Salad

Quick, versatile, and able to be served year round. Make this garden-fresh salad even tastier by adding fresh tomatoes when they’re in season. If you’re not in the mood for salad or you’re planning a get together with friends, grab some chips and turn this dish into salsa! Black eyed peas are filled with iron and calcium which is great for bone health. For an extra dosage of nutrients, reduce your salt intake by adding lemon or lime juice.

Ingredients
  

  • 8 oz Black-Eyed Peas, dried or canned, cooked and cooled
  • 1 Lemon Juice, fresh
  • 4 tbsp Extra Virgin Olive Oil
  • 1 Red Bell Pepper, medium sized, cut into 1/4 inch dices
  • 2 Jalapeno Pepper, seeds removed and deveined, chopped
  • 1 Avocado, fresh, small diced
  • 1 Tomatoes, medium, chopped
  • 1/2 cup Cilantro, fresh, finely chopped
  • 2 cloves Garlic, fresh, minced
  • 3/4 tsp Salt
  • 1/4 tsp Black Pepper, cracked

Instructions
 

  • Combine all ingredients together in a large bowl and mix well
  • Serve immediately; cool by itself or with Tortilla Chips, or can be refrigerated for later use
